About us

The owners of Brompton Food Market have, with the good people at South Kensington Estates taken over a beautiful pub.
The Hour Glass is a historic, independently owned pub located in the heart of South Kensington. Recently renovated and due to reopen in September, it’s laid out over two storeys – the ground floor is a traditional bar area while the first floor now boasts a new dining room and custom built kitchen. The Hour Glass has a great reputation among local residents as a traditional boozer with a bustling yet relaxed, unstuffy atmosphere. The refurbishment design plans aim to retain and enhance this atmosphere and we need an experienced General Manager and Head Chef who know how to generate this from the word go. We want the pub to be for local residents, local workers, visitors and tourists alike – a timeless London pub in the heart of a bustling community serving simple, seasonal and delicious food.

General Manager

As General Manager of the Hour Glass you will already have had experience running a brilliant pub, preferably in London, for at least two years. This is not a first appointment. You’re a leader who knows how to manage a traditional pub bar as well as separate dining room. Your cellar management skills will be exemplary.

You will receive plenty of support from the pub’s owners but you will be running it like it’s your own, working closely with a head chef and a team of staff which you will help recruit. You’ll have responsibility for managing stock, maintaining profitable margin levels and managing supplier relationships. You think strategically and have a drive for pushing the business forward including by creating and contributing towards the use social media platforms and marketing avenues to promote the pub at all times.

You will drive sales with innovative events and create a real community hub.

You will want to be seen as the landlord/lady and build relationships with your patrons which reflect this standing. We want you to be proud of and become part of the fabric of the pub right from the off.

There is newly refurbished, live-in accommodation available for the right candidate.
Salary 25-28k (live out) commensurate on experience with potential of live in accommodation

Head Chef


You will have had experience of cooking in a pub or restaurant renowned for its perfect, British, simple food. You will have excellent kitchen management skills – from an HR, hygiene and financial perspective.

You might be a current sous chef desperate for a chance to make a name for yourself in a new business or you might already manage a great kitchen and want a new challenge.

You understand that ingredients are more important than chefs and care about seasonality and provenance.

You let you food do the talking. This is not a macho business – you will be calm under pressure and respectful to everyone from the KP to the customers and everyone in between.  If you’re a bully, a scalder or a shouter, we’re probably not for you.

You will understand things like offal, pickling, smoking and braising and appreciate the beauty of a simple plate of food. You probably don’t like foams and smears. You understand that sometimes punters just want a great burger or perfect fish and chips…..

You probably have a copy of Fergus Henderson’s ‘Nose to tail eating’ tucked away somewhere and enjoy the food at The Anchor & Hope or The Canton Arms.

Salary 25-28k (live out) commensurate on experience with potential of live in accommodation
